120 g bag leafy salad mix 250 g bean sprouts 3 tbsp fresh Thai basil leaves, torn 1/2 bunch fresh mint leaves, torn 1 Lebanese/Persian cucumber, deseeded cut julienne style 1 thumb sized piece fresh ginger, peeled and cut julienne 1 lime, the juice 1/4 cup light taste olive oil 1 Thai red chilli, sliced 1/2 tsp sesame oil 1/2 tsp sweetener
Combine salad mix, bean sprouts, Thai basil, mint, cucumber and ginger in a large bowl. Mix together olive oil, lime juice, sesame oil, sweetener and chilli and pour over salad. Toss to mix through.
