Portuguese Baked Fish
A quick and easy one tray bake using traditional Portuguese flavours.

- 1 kg white flesh fish fillets (we used hoki)
- 1 red onion, sliced into rings
- 3 cloves garlic, sliced
- 1 tbsp paprika
- ½ cup extra virgin olive oil
- ½ cup dry white wine
- salt
- pepper
- 1 tbsp chopped parsley to garnish
Place fish fillets in a single layer in a baking dish. Layer over garlic clove slices, followed by red onion slices.
Season with salt and pepper and sprinkle the paprika evenly over the top.
Pour over half the olive oil and half the white wine.
Bake in the oven at 180°C for 10 minutes. Remove and pour over remaining olive oil and wine. Return to the oven and bake another 10 minutes.
Serve with freshly chopped parsley sprinkled over.
