Whisk egg and tamari soy sauce in large bowl and add chicken. Toss to coat with egg mixture. In a second large bowl or a large zip lock bag add remaining ingredients. Mix until well combined. Add chicken and toss to coat with coconut flour mix.
Place chicken on lined baking trays and spray generously with olive oil. Bake at 180C for 20 minutes. Turn and spray with more olive oil. Bake another 20-30 minutes. Serve.
