Portuguese Baked Fish

Ingredients

  • 1 kg white flesh fish fillets (we used hoki)
  • 1 red onion, sliced into rings
  • 3 cloves garlic, sliced
  • 1 tbsp paprika
  • ½ cup extra virgin olive oil
  • ½ cup dry white wine
  • salt
  • pepper
  • 1 tbsp chopped parsley to garnish

Instructions

  • Place fish fillets in a single layer in a baking dish. Layer over garlic clove slices, followed by red onion slices.
  • Season with salt and pepper and sprinkle the paprika evenly over the top.
  • Pour over half the olive oil and half the white wine.
  • Bake in the oven at 180°C for 10 minutes. Remove and pour over remaining olive oil and wine. Return to the oven and bake another 10 minutes.
  • Serve with freshly chopped parsley sprinkled over.
