Ingredients

  • 120 g bag leafy salad mix
  • 250 g bean sprouts
  • 3 tbsp fresh Thai basil leaves, torn
  • 1/2 bunch fresh mint leaves, torn
  • 1 Lebanese/Persian cucumber, deseeded cut julienne style
  • 1 thumb sized piece fresh ginger, peeled and cut julienne
  • 1 lime, the juice
  • 1/4 cup light taste olive oil
  • 1 Thai red chilli, sliced
  • 1/2 tsp sesame oil
  • 1/2 tsp sweetener

Instructions

  • Combine salad mix, bean sprouts, Thai basil, mint, cucumber and ginger in a large bowl. Mix together olive oil, lime juice, sesame oil, sweetener and chilli and pour over salad. Toss to mix through.
