Combine first 4 ingredients. Divide into 4 balls and flatten into rissoles.
Heat butter and olive oil and cook rissoles on low heat making sure the middle is cooked through. If you’re worried don’t make the rissoles too thick. Fry on both sides until nicely golden and coloured.
Serve with Tzatziki and side of your choice, salad is a great option, try this Greek Salad!
