Ingredients

  • 12 large shell on prawns
  • 400 ml coconut cream
  • 1 medium spring onion/shallot/scallion, sliced
  • 1 Thai red chilli, sliced
  • 2 tbsp fish sauce
  • 2 kaffir lime leaves, finely sliced
  • 1 lime, the juice
  • 1 tbsp coconut oil

Instructions

  • Combine all ingredients except prawns in a bowl or container and mix well. Add prawns and mix in. Cover and refrigerate 2 hours or overnight if time permits.
  • Thread prawns onto skewers. Heat coconut oil in a frying pan, fry prawn skewers for about 2 minutes on each side.
