Garlic Paste

  • Blitz garlic cloves in 250g batches (4 batches altogether) in a food processor or chopper. Push down any bits on the sides down with a spoon and blitz again. Add 5 tablespoons oil per batch and blitz until it makes a smooth paste.
  • Place heaped teaspoons of garlic paste in ice cube trays and cover with plastic wrap. Freeze until firm and pop cubes out. Fill zip lock bags with garlic cubes and store in the freezer until needed.
  • For cooked dishes you can throw the cubes directly into the pot or pan and they will quickly melt down. For raw dishes such as mince mixtures or marinades, just set a cube out to defrost before adding to your dish.
