Bring water to the boil in a large pot. Trim cauliflower and cut in half. Break into florets with your hands and place in the boiling water. Reduce heat and simmer for no more than 5 minutes.
Drain into a colander and let it cool off for about 10 minutes. Return to pot and add butter. Mash cauliflower and mix in butter using a stick mixer.
Add salt, pepper and coconut flour and stir through. Serve.
