  • Slice swede finely with a knife or mandolin. Season steak with salt and pepper. Heat olive oil and butter in a large frying pan and cook steak to your liking. For me this is always very RARE!
  • Meanwhile melt and heat lard or tallow over medium low heat. Fry swede slices in batches and remove to paper towel to drain. Line prosciutto in the centre of a plate. Place your steak on top. Quickly fry your egg, sunny side up unless you prefer a cooked yolk.
  • Top steak with egg and place swede chips in a circle around the steak. Use the runny egg yolk as a dipper for your swede chips.
