Slice swede finely with a knife or mandolin. Season steak with salt and pepper. Heat olive oil and butter in a large frying pan and cook steak to your liking. For me this is always very RARE!
Meanwhile melt and heat lard or tallow over medium low heat. Fry swede slices in batches and remove to paper towel to drain. Line prosciutto in the centre of a plate. Place your steak on top. Quickly fry your egg, sunny side up unless you prefer a cooked yolk.
Top steak with egg and place swede chips in a circle around the steak. Use the runny egg yolk as a dipper for your swede chips.
