  • Combine almond meal, mint and lemon zest in a bowl and season with salt and pepper. Dip lamb cutlets in beaten egg and them crumb with almond meal mix. Repeat until all lamb cutlets are crumbed.
  • Melt butter in a large frying pan over medium high heat. Cook cutlets in frying pan until golden on both sides. Serve with cauliflower mash and creamy gravy.
